We know that breakfast can sometimes be the hardest to deal with when you’re changing your eating habits. That’s why these easy egg white bites are the perfect solution! Not only do these make for a delicious breakfast, but they can be frozen and eaten for breakfast all week long (perfect for you meal-planners out there!)

-1 package panchette
-Carton and a half of egg whites
-shredded parmesan cheese
-Preheat oven to 350
-Coat muffin tin with cooking spray
-Fill each tin 1/3-½ of the way to the top wit a mix of of pancetta
and goat cheese
-Fill tins 2/3 of the way to the top with egg whites
-Add Parmesan cheese and sun-dried tomatoes on top
-Cook for 20 minutes
-Let cool for 2-3 minutes
-You can freeze egg bites and reheat later.
